There are plenty of apps on anatomy but I need physiology.

I would like to see an app based solely on Physiology. But, VNC certainly can handle it. Great idea.

A remote control app is certainly possible… the only tricky thing might be user input. My favorite for Palm/Windows Mobile is iSilo, and I have a ton of files in that format. If someone ported that to the iPod Touch, (or found a reader to work with those .pdb files) I'd buy one in a heartbeat.
I'd also like to see an app to control the iPod Touch/iPhone from Windows (like MyMobiler for Windows). A lot of times I'm working at the computer and want to send a quick text message - why should I pick up my phone to do that when I can just remotely control my phone using my computer keyboard and mouse?
Those are my top suggestions ...

I’d definitely want to see a GOOD e-book reader.
